Stuffed Whole Chicken w/Blue Cheese Dip

 

 

Stuffed Whole Chicken w/ Blue Cheese Dip

HOT!!!

Prep: 20 min.

Bake: 70 - 80 min

Total: 90 plus in

Preheat oven to 350° F

4 - 5 lbs. Chicken, rinse, pat dry and trim fat

 Saute' in pan until translucent:

   1 TBS Olive Oil

   1 Onion, diced

   2 TBS Garlic, minced or crushed

   1/2 TBS Sea Salt or to taste

Remove from heat and add:

1 - 2 TBS Butter, and stir until it melts into the above mixture

Allow to cool and stir into the above ingredients:

1/2 tsp each of dried Rosemary, Thyme, cumin, ground coriander

1/4 tsp Paprika and 1/8 tsp ground marjoram

1-3 TBS Doc's Jade Burst or Doc's Explosive BBQ or Doc’s Zesty BBQ

 

Chicken preparation:

   Using rubber gloves, pull the skin away from the meat and stuff each cavity with the herb-butter,   

   spice  and hot sauce mixture

  • Lightly brush the chicken with Olive Oil or Butter (or you can use your gloved hands)

  • Place into a roasting pan breast side up over parchment paper and add

  •    1 Cup Chicken Broth and 1/4 cup water or white cooking wine to bottom of pan

  • OPT: If you desire to, add into the pan: carrots, onions and potatoes cut into large chunks

  •     and put into baking dish with chicken

  •    Close the cavity by sewing the loose skin together with toothpicks, or twine.

  •    Alternatively, cover the cavity with a piece of foil or a slice of bread.

  •    Place in a 350° F oven on next to lowest rack and roast about 90 minutes or 1 1/2 hours until

  • the outer skin is crispy. You may baste at any time. Make sure it's cooked thoroughly by pulling

  • on the leg to see if it separates easily

  •     Test internal temperature in thickest part of thigh away from fat and bone must read the

  • minimum safe temperature for consumption of 165 F. The stuffing needs to have the same temperature reading.

  •     Before you remove from the oven make sure it is lightly browned on top side. If not, leave a

  • little longer in the oven but not more 

  • You may scrape drippings from bottom of pan and use the juices for gravy or the sauce recipe below

 

Make a gravy from the pan drippings 

Serve with Homemade Biscuits, Yummm!!

 

 

Blue Cheese Sauce, Mix together:

1 C. Greek Yogurt

1 tsp Worcestershire Sauce

1/4 C. Celery, diced finely

1/4 - 1/2 C. Crumbled Blue Cheese, or

Feta Cheese, crumbled      

Add any of your favorite Doc's Sauces

 

Serves 4 to 6

OTHER Additions: 

1 - 2 TBS Fresh Green Onions or Chives,

   chopped finely

1 - 2 TBS Doc’s Jade Burst or any of Doc's

   sauces per serving

Salt & fresh ground Pepper to taste
