Spinach Crust Pizza Revised
(no flour or yeast)
Preheat stone in oven to 350 degrees
First Prepare the Nuts:
1 1/2 C. Almonds
Place nuts in a pot with filtered water, bring to a boil; drain & pop those babies right out of their skin
(Any nut you have on hand like Pine Nuts will do, no need to boil (they are expensive!)
In a Food Processor Pulse, till smooth:
2 TBS Butter or fat of choice
2-3 Garlic Cloves or more if you really like it garlicy
Add prepared Almonds or nut of choice
16 oz frozen Spinach, thawed, then squeezed to release all the water. *
*NOTE: You can also steam fresh spinach (6 Cups tightly packed, and squeezed out, to 1 1/2 cups,cooked)
1 Cup Basil Leaves, FRESH (Sometimes I don't have Basil, so I just use more Spinach!)
1/4 tsp Sea Salt
Add: 2-4 whole Eggs (I usually use 3, my eggs are organic and sometimes odd sized)
(all the protein you can ever hope for! Just tweak how many works best)
NOTE: Some of you who are Doc's sauce fanatics may want to add about 1 - 2 TBS hot sauce at this time in the spinach crust. There's no need because it can go in the sauce or on each slice after cooked. Either way, Yum!
: Prepare tray (or a stoneware) with greased parchment paper. You will need the parchment to flip it over to cook the other side with the toppings
: Pour the dough onto the prepared tray or stone in a round or rectangular shape about 1/4 - 1/2 inch thick. Too thin and it will be hard to flip. Practice makes perfect!
: Bake for 20 min and let cool slightly
: Flip it over and remove the parchment to put the toppings on (cooked or raw)
: Reset the oven to 400 degrees (it will only be for a few minutes to melt the cheese)
TOPPINGS are done in layers; the even more fun part with sauces can be added per slice too!:
Tomato Sauce (your favorite) with the addition of: > Doc's Mash or > Doc's Reducer or > Doc's Garlic Rush> Jade Burst or any of Doc's Sauces will do! **Mix doc's sauces togehter & create your own flavors!
: Ground turkey, ground beef, ground deer or shredded chicken, PRE-Cooked of course! Or SEAFOOD....
: Veggies of choice (more fresh spinach, broccoli, asparagus, onion, green pepper, habanero peppers or jalapenos, olives, etc. Your choices are endless)
: Cheese (type and how much depends on you - goat cheese, parmesan, cheddar or mozzerella)
: Place in oven and watch it for about 3-4 min depending on how hot your oven gets. You don't want to burn the cheese.
Serve with a salad or any healthy side dish. Enjoy!
Yields: 4 - 6 servings
**NOTE: We recommend using all doc's sauces when blending them together
Store in fridge, tightly wrapped....if it makes it there!
Recipe courtesy by popular demand (the big guy-Doc). This recipe has been revised and through experimenting with it, I believe you will love it. It's one way of getting those much needed veggies in your diet!
This is a Paleo friendly recipe since we are not using flour or yeast and is solely veggies only! You can change any of the recipes on our site to be Paleo friendly by changing flours to Almond flour, Coconut flour, Almond Milk or coconut milk, etc. and using Baking Soda instead of baking powder.
This recipe is very satisfying and filling. We hope you enjoy it as much as Doc & I do!
