Glazed Sweet Potatoes
Sweet Potatoes or yams, boiled (skins removed)
(or 1 can Sweet Potatoes, drained)
1/3-1/2 cup Honey (depending on taste)
1/4-1/3 cup Orange juice, freshly squeezed
1-3 TBS >Doc's Peach Ember or >Doc's Mash
1/4 cup butter, melted
1/2 organic Sea Salt or to taste
1/4 tsp Cinnamon
1/4 tsp Ginger Grating of nutmeg
Opt: Doc's Sweet Nuts or Hot Spiced Nuts

Arrange peeled, sliced potatoes in greased casserole

Pour the combined remaining ingredients over top of the potatoes

(This recipe also works in a heavy pan on top of the range)

Bake at 375 degrees for 30-40 minutes
Optional: Top with marshmallows the last few minutes and broil until brown slightly for 1-3 minute. Watch it carefully so they don't burn.
Serves 4
Another VERSION:

Mash the potatoes and mix the ingredients inside.

Top with marshmallows at the end and BROIL for 1--3 minutes
