                               This is a colorful & lively spiced salsa & is very eye catching.

You’ll be the hit of the party!

 

 

In Bowl, Fold the following ingredients together, gently:

>Add this last, just before serving:

1/2 Cup Blackberries or blueberries (folding in just before serving helps prevent the other fruit from absorbing blue stains!

 

1 Cup Peaches, peeled, diced, or 1/2 of a ripe medium mango, diced

1 Green Onion chopped thinly

1 Kiwi, peeled and diced

1/2 Cup Pineapple, diced

1/4 Cup Strawberries, diced

1 TBS Cilantro, fresh chopped

 

Mix Dressing in separate bowl & to TASTE:

1/2 fresh Lime, juiced

1-2 TBS Peach Ember 

2-3 TBS Honey or sweetener of your choice

1/4 tsp coarse Salt (kosher or Sea Salt)

1 tsp Ginger, peeled & grated

Garnish with fresh Mint

 

Do-Ahead: Make the salsa up to 24 hours ahead of time, and store tightly covered in the refrigerator. Just add the dark berries last.

 

Serve in a decorative cup or with:

Fresh Whipped Coconut Cream

Meat or Seafood

Tortilla Chips

Shredded Coconut

 

Makes 6 servings (1/3 – 1/2 Cup each)
