Fiery BBQ Meatballs
(This recipe is a great Appetizer, too. Just make the meatballs smaller.)
1 lb lean ground turkey or chuck 1 Onion Soup dry mix, your choice (Or make your own mixture of: 1/2 tsp poultry seasoning, 1/4 tsp marjoram, 1/4 tsp parsley, dried, 1/2 tsp onion powder, 1/4 tsp garlic powder, 1/8 tsp sage, 1/4 tsp celery salt, and salt and pepper to taste)
1/4-1/2 C. bread crumbs (or up to 1 cup Almond flour when using turkey)
In a bowl combine all meatball ingredients (if using hot sauce, use rubber gloves when working with the hot sauce in the mixture) and roll meat mixture into about 20-22 mini meatballs.
On a greased sheet pan, Bake at 350 degrees F for about 25 min. (not longer, or they will dry out)
One 15oz. Tomato sauce
1 tsp cumin
1 tsp oregano
1/2 tsp ginger
1/2 tsp coriander
1 TBS brown sugar, coconut palm sugar or honey
In a large saucepan, combine all sauce ingredients, bring to a light boil.
Add cooked meatballs to sauce and simmer about 15 min.
Simmer on medium heat for about 20-30 min stirring almost occassionally till thickened.
