Chicken Fruit Salad
All the textures of this salad are unique to say the least!  It can be made without the chicken
as a stand alone salad.

 Mixed Lettuce Greens (Spring mix)

1 Avocado, peeled, stone removed and diced
2 pink Grapefruit, segmented
Cooked broiled Chicken
2 TBS Olive Oil
1 Garlic clove, crushed
Salt and Pepper
Fresh Chives for garnish
Wash salad leaves and spin dry
Arrange attractively on a serving plate with the avocado and grapefruit
Place cooked chicken on top
Drizzle the dressing over the salad

2 TBS Lemon, juiced
2 TBS - 1/4 C. plus Mayo of choice
1 - 2 TBS Dijon mustard, opt

2 TBS Olive Oil
2 TBS >Doc's Jade Burst or any of >Doc's Sauces
1 TBS Honey
1/8 tsp Turmeric or curry or cumin
1 TBS snipped fresh Chives
Salt and Pepper to taste
Emulsify the dressing ingredients by placing into a screw-top jar and shaking it vigorously;
   or emulsify it with a wand blender.
Taste the dressing to adjust for seasoning.
