Butternut Squash-Savory

 

                    Cut 1 Squash in half lengthwise and scoop out the seeds

                    Preheat oven to 400 degrees

                    Place squash skin side up in large oven proof pan with about 1/2 cup water

                    Pierce the skin with a fork

Cook for 30 minutes or until a fork goes through easily

 

While squash is baking, in a saute' pan cook till lightly browned:

1/4 to 1/2 Cup Onion, chopped finely (depends on the size of the squash)

2 Garlic cloves, chopped

 

Blend the above ingredients together with:

1 tsp Rosemary, finely chopped (optional)

1/4 tsp Curry Powder

1/8 tsp Ginger Pinch of Cardamom

1/2 tsp Garlic Powder Salt and Pepper to taste

1 TBS Honey

1 TBS Butter, melted

Your choice of any Doc's Sauces

 

When the squash is cooked and soft:

Remove from pan and let cool until you can handle it safely

Mash the squash in a mixing bowl

Add the above ingredients and blend well

Garnish with parsley

 

Serve with:

Seafood

As a side dish with any meal
