Apple Fire Fritters
Trying to get the children to eat more fruit is sometimes a difficult task. Here's an idea that you can try.

Preheat heavy skillet with Grapeseed oil on medium heat (or Olive OIl)
Note: You will be adding oil as needed)
In a mixing bowl combine well:
2 C. of your favorite Pancake Mix, prepared as directed. Try to find a nice healthy one that will work. Make sure to keep the batter a little thick.
Grated nutmeg or 1/2 tsp cinnamon
1/2 tsp Vanilla
1-2 TBS >Doc's Peach Ember
Core and slice Apples into 1/4" rings (There will be enough for maybe 4-5 small apples
Dip the rings into Pancake batter and gently place in the skillet
Brown on both sides (They cook quickly, so don’t walk away!)
Sprinkle with powder sugar
Whipped Topping (or use full fat from coconut milk, whipped)
Yields: about 8-10 Apple Fire Fritter Slices
