
Stuffed Whole Chicken
with Blue Cheese Dip
HOT!!!
Wash pre-cut Chicken pieces and trim as much fat as possible.
Sauté in pan until translucent:
3 TBS Olive Oil
1 Onion, diced
Melt into this mixture about 1-2 TBS butter
Let cool slightly and blend into the above ingredients:
1-2 TBS Fresh Rosemary or Thyme, chopped finely
(or any fresh herb-get creative and go according to
your taste)
2 TBS Garlic, minced or crushed
1-3 TBS
Doc's Reducer or
Doc's Zesty BBQ
Chicken:
Using gloves, take each piece of chicken and pull the skin away from the
meat and fill each cavity with the herb-butter hot sauce mixture.
Lightly brush the chicken pieces with Olive Oil.
Place into a roasting pan and add a little water or white cooking wine
at the bottom of the pan (about 1/4 Cup)
Place in a 450°
oven on the middle rack and roast about
30-45 minutes or until the outer skin is crispy. (Depending on
your oven it may take 25-60 minutes). Make sure it's cooked
thoroughly.
You may scrape drippings from bottom of pan and prepare as in the
Stuffed Herb Chicken or
Blue Cheese Dipping Sauce
Mix together:
1 C. Greek Yogurt
1 tsp Worcestershire Sauce
1/4 C. Celery, diced finely
1/4-1/2 C. Crumbled Blue Cheese
1-2 TBS Fresh Green Onions or Chives, chopped finely
Salt & fresh ground Pepper to taste
