Chili con Queso
People know this as a "bowl of red". It's a classic Mexican dish.
You can add cubes of smoked cheese and serve with rice.
2 C. Red Kidney beans, soaked and drained
(prepared according to package directions)
In Pot saute':
3 TBS Sunflower oil or Safflower Oil
1 Onion, chopped
1 Red Pepper, chopped
2 Garlic cloves, crushed
1-2 TBS >>>Doc's Reducer or>>>Doc's
Rush
1/2 TBS chili powder
1 tsp gr. cumin
4 C. stock or water
Salt and gr. Black pepper to taste
1 tsp sugar or honey
4 oz smoked cheese or Monterrey Jack cheese, cubed for serving
Opt: 1 tsp Chipotle Chili Pepper
Rinse the beans. In a large saucepan heat the oil and gently fry the
onion, pepper, garlic about 5 minutes. Stir in the spices and cook for
another minute, then add the beans, stock or water and black pepper.
Don't add salt at this stage.
Boil for 10 minutes, cover and turn down to a gently simmer. Cook for
about 1 hour. Don't let it get dried out.
When the beans are tender, season with salt. Remove about a
quarter of the mixture and mash to a pulp.
Return the pulp to the pan along with Doc's Reducer and stir well. Add
sugar or honey and serve hot with the cubed cheese on top. Great with plain
boiled long-grain rice.
